Eliza Seymour Lee was a free person of color and a renowned pastry chef and hotelier in antebellum Charleston, South Carolina. The daughter of Sally Seymour, a former slave and herself one of the city's most famous chefs, Eliza and her husband, John Lee, operated four of Charleston's finest hotels. They bought the house at 92 Tradd Street in 1832. In addition to making it their residence, they also used the house as boarding house, an event space, and a bakery. Although the story has never been definitively proven, local legend says that two of Lee's sons sold some of Eliza's recipes for savory pickles and preserves to Henry Heinz, becoming the foundation of Heinz 57 Sauce.See also: https://speccoll.cofc.edu/charlestons-free-people-of-color/eliza-seymour-lee-house/
